Family Favorite Roasted Garlic

Roasting garlic in the oven is easy and doesn’t need a lot of attention once it’s in the oven. It has a rich nutty flavor when added to mashed potatoes, pasta, or pizza. This recipe is perfect as a topping on crusty bread or crackers.

Prep Time: 5 minutes Total Time: 40-70 minutes

Key Ingredients

  • Several whole heads of garlic
  • Italian parsley- about 3 sprigs
  • Generous amounts of olive oil
  • Salt and black pepper
  • 1 pkg. of grape tomatoes (optional)

Preparation Instructions

  • Heat the oven to 400° F (200° F).
  • Peel away some of the skin, leaving enough layers to hold garlic heads together.
  • Slice off the top of garlic heads with a sharp knife. (The tops of the cloves should be visible.)
  • Place the garlic with the cut side up in a baking dish.
  • Drizzle with olive oil and season with salt and freshly ground black pepper.
  • Mix the tomatoes with some olive oil and add them to the dish, tucking them around the garlic.
  • Cover the dish with foil and roast until the cloves turn a golden brown color and become nice and soft. This will take anywhere from 40 to 70 minutes depending on your oven. Check every so often to see how it is progressing.
  • Once cooked, take out the dish from the oven and remove the foil.
  • Sprinkle with chopped parsley and serve with baguette slices

For this recipe, you’ll want to use medium to large heads of garlic, as smaller heads will tend to dry up and may burn. Refrigerate any leftovers in an airtight container for up to two weeks, or keep them in the freezer for up to three months.
