We only use 18/8 High Grade Stainless Steel for hand forging ALL our flatware and serveware. We finish the handles in Burnt Black which is a highly durable food safe Patina, Antique Copper and Vintaged Gold finishes are high quality layer of Electro Plating with a layer of food safe durable lacquer. Nascent Steel finish is without finishing, just raw steel finish as it comes out of 4 cleaning processes.
