The Khajur Anjeer roll is a popular Indian dessert sold widely in Indian sweet shops. We love that this date, nut & fig roll is also very easy to make at home and that this sugar-free dessert gets all its sweetness from dates and figs.

Ingredients
- 1 ½ cups Medjool seedless dates
- 1 cup dried figs
- 1 tsp cardamom powder
- 1 cup chopped cashew nuts
- 1 cup chopped almonds
- 2 tablespoons ghee/clarified butter
- 2 tablespoons coconut or poppy seeds (optional, for garnish)
Preparation Instructions
- Soak the dried figs in hot water for about 30 minutes until they are soft.
- Combine the dates and figs and pulse them in a food processor until the mixture is a smooth paste.
- Dry roast nuts in a medium saucepan until they are lightly toasted. Set aside to cool and then chop or pulse the nuts in a food processor until coarse.
- Add ghee to a saucepan, sauté the date and fig paste for 10 minutes. The natural sugar in the dates will caramelize and the mixture will turn dark brown in color. Turn off the heat and set aside to cool.
- Once cool, add cardamom powder and mix in the nuts.
- Prep your workspace with parchment paper and place the mixture on top. The mix will be very sticky, so you can add butter to grease the paper if needed.
- Press and roll the fruit and nut blend into a log.
- Cover the roll tightly with parchment paper or cling wrap and chill in the refrigerator for about 4-5 hours (or overnight).
- Remove it from the refrigerator and roll it in coconut, sesame, or more chopped nuts, or leave it as is, cut it into slices, and enjoy.
Dates are rich in energy-boosting minerals, and dates and figs are rich in dietary fiber. To use dates only for the recipe, simply double the quantity. Alternate or choose your favorite nuts for this recipe, including cashews, walnuts, pecans, almonds, and pistachios.
