Are Marble Cutting Boards Better Than Wood?

When it comes to opting for timeless over trendy in our kitchens, the beauty of natural marble is a top choice. Because of its beauty, it can appear delicate, but it is quite durable and hardy. Marble, when properly cared for can last for decades.

Advantages of using a marble cutting board

You can show it off! One of the advantages of having a beautiful marble cutting board is that you can use it as a cheese platter or charcuterie board at your friend and family gatherings. Chill the marble in the fridge before using it and your cheese, fruit, and cured meats will stay fresh and delicious. What’s more, marble boards won’t damage the more blunt edges of cheese or butter knives.

A pastry chef’s dream. Ask anyone who does a lot of baking and they’ll tell you that rolling pastry or cookies on a marble surface works great. That’s because marble is colder than room temperature so the surface keeps the buttery dough from getting too hot while working it, which can make the dough lose its desirable tenderness. For flakier dough, a helpful tip is to chill the dough before rolling. A marble board is a great kitchen tool for rolling out dough for cookies or pasta and biscuits.

Heat-resistant properties. Marble is heat resistant up to 350 degrees Fahrenheit (176° C). Unlike wood which can dry and crack when exposed to too much heat or sunlight, marble keeps its cool. That means you can place your toasty loaf of bread on the board to slice and serve it. Having said that, we recommend that a hot pan from the oven rests on a trivet, as very high heat can discolor your marble cutting board.  

Disadvantages of marble cutting boards

Marble is a porous material. Marble is a natural stone and as such it has minute spaces or holes in it that will collect liquid. That means foods, grease or liquids can stain it. Wiping up spills and food residue is important to keep your marble board looking its best.    

A tough surface. Wait a minute, isn’t a tough surface for a cutting board a good thing? While your marble cutting board can handle cheese and butter knives, it will dull your sharp cutting knives with continuous use.  

Not suitable for cutting raw or roasted meat. Marble boards have a smooth surface, which means raw or cooked meat will tend to slip when cutting it. What’s more the meat juices will have no place to collect, leaving a messy work area. Wood boards are a better surface for prepping meat.

Many people hesitate to buy marble cutting boards because they believe that they are fragile. However, if you wipe up spills right away, don’t let them sit in water or oil, and don’t place hot pots on them they will last for many years.

After weighing the pros and cons of marble versus wood cutting boards, it's difficult to definitively say that one is superior to the other. Each material possesses unique qualities, and both types of boards have their place in a chef's kitchen.
