“At the Hop” Carrot Cheese Ball

This recipe meets all the requirements for something fun, family-friendly, and fast! It can be made in advance, so it’s perfect for hosting a spring celebration or Easter gathering.

Prep Time: 40 minutes Servings: 24 people Calories: approx. 250 kcal

Ingredients

  • 2 blocks of cream cheese
  • “Everything but the Bagel” seasoning
  • 1 or 2 finely chopped green onions
  • 1/4 block of cheddar cheese, shredded
  • Parsley or dill (for carrot end)

Instructions:

Take cream cheese blocks out of the refrigerator and place them on a sheet of parchment or wax paper until the cheese is soft enough to work with.

Chop the green onion and set aside

Transfer the cream cheese to a medium-sized bowl and mash it with a fork. Add the seasoning (to taste) and green onion. Continue to mix the ingredients until everything is well blended.

Place the cream cheese mixture back on the parchment paper and using the paper (less messy!) mold it into the shape of a carrot. Keep it wrapped and place it in the refrigerator for about 30 minutes.

Note: If you’re making this ahead, you can keep it in the refrigerator for up to 3 days. Just be sure it is well-wrapped. When ready to serve, add the cheddar cheese coating so it looks and tastes fresh.

Place the carrot on a board or platter.

Shred about ¼ of a cheddar cheese block and place the shredded cheddar cheese on your cheese carrot.

Finish the top of the carrot with a fresh bunch of parsley or dill.

Serve with crackers

Variations: If you like things smoky and crunchy, add 8 strips of cooked and chopped bacon.
