Carrot Veggie Flowers and Dip Platter

Enjoy serving this show-stopping veggie charcuterie board to family and friends. Serve it as a light, healthy snack before dinner or as part of a grazing table. Either way, it is a guaranteed crowd-pleaser. We used our favorite store-bought hummus and a whipped feta dip (recipe below) that comes together in 5 minutes with a food processor.

Prep Time: 8-10 minutes Total Prep Time: 15 minutes Servings: 6 Calories: approx. 107 kcal (per serving)

What you’ll need: 1) A food processor to make the delicious feta cheese dip. 2) A charcuterie board. We used the Cortar Marble Charcuterie Board so the colorful veggie flowers really pop! 3) Two small bowls for dips. 

Ingredients:

  • 3-4 carrots (select similar sizes)
  • 2 red bell peppers
  • 1 bunch of green or spring onions  
  • 1 bunch of celery
  • 1 hummus dip
  • 1 whipped feta dip

Ingredients for feta dip:

  • 8 ounce block of feta cheese
  • ¾ cup whole milk Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove (finely sliced)

Instructions:

Cut your carrots and bell peppers into sticks or “petals” and set aside. Tip: Bell pepper skin can be hard to cut. It’s easier to slice through the skin from the inside of the pepper.

Position your dip bowls (flower centers) where you want them to be on the platter.

Make the whipped feta dip. Crumble the feta cheese into a food processor. Add the Greek yogurt, olive oil, lemon juice, and garlic. Pulse and blend the mixture until it has a whipped, creamy consistency. Season to taste. (We added freshly ground black pepper. You can also add chopped parsley.)

Arrange the carrot sticks around one of the bowls to make one flower and the bell pepper petals around the other bowl.

Pick two fresh green stems from your spring onions to use as the flower stems and set them in place.

Once your flowers and stems are in place, you’ll know how long to cut your celery sticks to mimic the grass. 

Fill your bowls with the hummus and whipped feta dip.

Serve and enjoy!

This is a fun platter to assemble with your family. The original recipe uses sugar snap peas for the grass, but since we couldn't find any, we used celery stalks instead. Go ahead and be creative! Have fun creating flowers using different colored bell peppers and yellow and purple heritage carrots.

For the veggie dips, you can serve your favorite store-bought and/or homemade dips – the possibilities are endless and delicious!
