If you’ve never liked cottage cheese because of its texture, this recipe is worth a try. Cottage cheese curds are blended into a smooth, creamy texture, flavored with your favorite fruit, and put in the freezer to set. Because of the cottage cheese, this ice cream is high in protein and a healthy substitute for traditional ice cream.

Key Ingredients
- 32 ounces of cottage cheese
- Approximately 2 pounds (7 cups) of fresh strawberries (Add more or less as desired)
- 2 tablespoons of honey (maple syrup can also be used)
- 2 teaspoons vanilla extract
- 1/4 cup finely chopped walnuts (optional) Topping of choice (hot fudge sauce, crumbled graham crackers, chopped nuts)
Preparation Instructions
- Wash and remove the stems of strawberries.
- Add cottage cheese, strawberries, and sweetener to a blender (you
- can also use an immersion blender).
- Blend ingredients until smooth.
- Add more strawberries and honey (or maple syrup) to taste.
- Pour into a freezer-safe container.
- Freeze for one hour, remove and stir the mixture. Repeat every hour until your ice cream has reached the consistency you like. It should be semi-frozen and easy to scoop.
- Garnish as desired and serve with your topping of choice.
This family-friendly recipe makes enough for 4 people to have about 3 scoops each. It’s also effortless to fine-tune to suit your taste. You can use 4% whole milk cottage cheese if you're not watching calories. Substitute strawberries with another fruit with a low-to-moderate water content, like blueberries, raspberries, or mango.
