Mighty Meatballs

These mighty meatballs are easy to put together. Bake them and add them to a delicious marinara sauce. Add pasta and you have a delicious hearty dinner.

Ingredients:

  • 1 cup seasoned bread crumbs
  • 1-1 1/4 cups whole milk
  • 1 pound ground beef
  • 1 pound ground pork, (not breakfast sausage)
  • 1/3 cup grated onion
  • 3 large garlic cloves, minced or finely grated
  • 2 large eggs, lightly beaten
  • 2-3 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly cracked black pepper (to taste)
  • 2 teaspoons Mediterranean oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary (crushed)
  • 1 teaspoon dried basil
  • 1 or 2 jars of your favorite marinara sauce
  • 1/4 cup fresh Italian parsley leaves, finely minced
  • 16 ounces spaghetti noodles, optional

Instructions:

Preheat the oven to 350°F

Line a rimmed baking sheet with foil for easy cleanup.

Place the bread crumbs and milk in a medium bowl and stir. Set for the breadcrumbs to soak.

Combine the beef and pork in a large bowl, breaking apart as you add them.

Grate the onion and garlic and add to the ground meat.

Lightly beat two large eggs and combine with soaked bread crumbs. Add to meat along with salt, pepper, oregano, thyme, rosemary, and basil. Mix everything thoroughly.  

Make a small sample patty (about 1 tablespoon worth) and sauté it in a small nonstick pan. Taste it after it has cooled and check for seasonings. Adjust seasonings to taste.  

When you’re satisfied with the seasonings, start shaping your mighty meatballs. Use a ¼ cup measuring cup or a #12 ice cream/cookie scoop and then use your hands to shape the meat into meatballs. Place them on the lined baking sheet, spaced about ½ inch apart for airflow.

Note: For smaller golf ball-sized meatballs, you’ll need to adjust the cooking time. Use a digital thermometer for best results.

Bake the meatballs for approximately 25 to 30 minutes. Check your meatballs with a digital thermometer. An internal temperature of 160° degrees is a safe temperature.

While meatballs are cooking, heat your marinara sauce.

Remove meatballs from the oven and add them to your warm marinara sauce. Sprinkle with parsley. Serve over spaghetti and enjoy!
