Cheese and crackers with a festive seasonal twist! These tasty pumpkin pie bites come together with delicious cheddar cheese, crackers, and whipped cream cheese. Serve them as a snack or a quick and easy appetizer for the holidays.

Ingredients:
- 1 8-ounce block of cheddar cheese
- 1 box of pita triangular crackers (or any triangular crackers you prefer)
- 1 box of Chicken in A Biskit crackers (or any rectangular crackers with scalloped edges)
- 1 8-ounce tub of whipped cream cheese
Instructions:
Cut the 8-ounce block of cheddar evenly in half, lengthwise.
Place both halves of the cheddar block on a cutting board.
At one end, cut out a triangular shape of cheese. Tip: Lay one of the triangular crackers over top for size. Alternate directions, cutting out cracker-sized triangles until you can’t cut anymore.
You should be able to get 5 triangles from each cheese block.
Place your whipped cream cheese into a Ziploc bag. Press all the cream down to one corner and using scissors cut off a little of the corner
Squeeze the bag lightly to add a dot of cream cheese “glue” onto the bottom of a cheese triangle. Add the cheese triangle to the crackers making sure it covers the cracker evenly. Press down to glue it into place.
Place the pie pieces on a serving platter and repeat the process until all the bottom pie crusts are complete.
Next, add another dot of cream cheese glue to the bottom center of a Chicken in A Biskit cracker, then gently press it flat against the back of the cheddar-topped cracker to form the crust of your pie.
Repeat until all the cracker pie pieces are finished.
Arrange the cheese and cracker pumpkin pie bites on a serving dish.
Top each with a dollop of the piped cream cheese- it looks just like whipped cream!
