Ingredients:
- 1 large French baguette, cut into ½ inch slices
- 3 peaches, chopped (removing the peel is optional)
- 1 cup cherry tomatoes, cut into quarters
- 2 Tbsp. chopped fresh basil
- 1 Tbsp. extra-virgin olive oil
- 1-2 garlic cloves
- A pinch of salt
- 1 cup ricotta
- 1 tsp. finely grated lemon zest
- Freshly ground black pepper to taste
- Hot honey*, for drizzling
Instructions:
Preheat oven to 450°F (230°C)
Slice the baguette into ½ inch slices and set aside.
Cut the tomatoes into quarters and toss them into a medium-sized bowl. Peel(optional) and cut up peaches into bite-sized pieces and place them in the bowl. Add freshly chopped basil and pour on the olive oil, tossing everything together thoroughly. Season to taste with salt and pepper.
While you toast the baguette slices, leave the peaches and tomatoes in the bowl to sit out at room temperature. The mixture will develop more flavor and become juicier.
Lay out the baguette slices on a large or two medium-sized baking sheets. Brush the tops of the slices with olive oil.
Place the baking sheet(s) in the oven and bake the bread slices until toasted, about 5 minutes.
Remove the toasted baguette slices from the oven and, pressing lightly, rub garlic over each slice.
In a medium bowl, add the ricotta cheese. Grate about a teaspoon of lemon zest into the bowl and mix.
Spread each piece of bread with the ricotta cheese.
Add the peach tomato mixture to the toasted bread. Important: After letting the tomato and peach mixture sit for a while, the tomatoes will have released some juice, so use a slotted spoon to strain the mixture before placing it on the toast, or your toast will get soggy.
Drizzle the bruschetta with hot honey and serve!

*Hot honey is honey infused with chili peppers for a sweet, spicy flavor. If you’re not a fan of hot condiments, you can drizzle your bruschetta with regular honey. And if you’d rather not use honey, a balsamic glaze is the ultimate sweet and tangy drizzle!
You can also substitute whipped feta cheese for the ricotta spread.
