Watermelon Cucumber Salad

Prep Time: 15 minutes Serves: 8 people Calories: App. 144 kcal

Salad ingredients:

  • 1 small or ½ large watermelon
  • 1 English cucumber or field cucumber
  • About 15 mint leaves 
  • 15 basil leaves  
  • ½ cup of feta cheese (we chose feta packed in brine)

Salad dressing ingredients:

  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons honey
  • 1 pinch of sea salt
  • A splash of lime (or lemon) juice  

Instructions:

Slice and cut the watermelon into bite-sized cubes

Rinse off the cucumber and slice into thin, half-moon slices (if using an English cucumber, leave the skin on). If using a field cucumber, slice and remove both ends, and peel the skin before slicing.

Line a bowl with fresh lettuce leaves (optional)

Place the watermelon cubes and cucumber into the bowl

Chop or tear the fresh mint and basil leaves, adding them to the rest of the ingredients

Before serving:

Pour the honey and lime dressing onto the salad and gently toss the salad to thoroughly blend the dressing

Crumble the feta cheese and sprinkle it generously over the salad

One of our favorite picnic and grill salads to make fresh and enjoy right away. You can make the dressing up to 3 days ahead and keep it in the refrigerator. Add it to your salad just before serving.

We kept this salad to just a few ingredients, but you can certainly add to it! For a boost in flavor and pops of color, why not add cut-up red onions? Avocado is a good healthy fat, and when diced small, it adds a creamy texture throughout the salad. And if your summer hasn’t been hot enough, top your salad with a few jalapeno pepper rings for added heat and zest.
