Pesto Rosso Tortellini Skewer Appetizers

Pasta on a skewer? Don’t worry, these tortellini skewer appetizers are easy to prepare! Toss them in pesto for added flavor and flank them with sweet and tangy sun-dried tomatoes. Going to a party and need an appetizer? These nibbles are easy to transport and guaranteed to fly off the plate fast!

Tortellini Appetizers on Bird Olive/Cocktail Picks

Prep Time: 10 minutes Total Time: 18 minutes Serves: 6-8 people Calories: About 141 kcal (per person)

Ingredients:

8 -10 ounces of Tortellini refrigerated (cheese or spinach works best)

1 jar of prepared Pesto Rosso* or Pesto Genovese (basil pesto)

8-ounce jar of julienne-cut sun-dried tomatoes in oil

*Pesto Rosso is Italian for “red pesto” made with sun-dried tomatoes. It’s a variation of the classic basil pesto Genovese and a good substitute for those with pine nut allergies. We picked a store-bought Pesto Rosso made with cashew nuts.

Instructions:

Have a large bowl with pesto in it standing by.

Cook the tortellini according to package instructions. Once cooked drain the pasta and rinse it gently in cold water. Place the rinsed and drained pasta in the large bowl with the pesto.

Gently toss the tortellini in the pesto, to cover each piece.

Drain the liquid from the sun-dried tomatoes and place the julienne slices in a small bowl. 

Start skewering with one strip of tomato followed by one tortellini then one more tomato and tortellini.

Refrigerate the appetizers until time to serve.

You can create variations of these tortellini skewers using:

Bocconcini (small fresh mozzarella balls)

Pepperoni

Grape tomatoes
