Our Eclipse white and green marble board is perfect for this St. Patrick’s Day fruit rainbow and pot of gold. For good luck, we let all the gold spill out of our pot and added vanilla wafer “coins” to the mix. Fruit is always a refreshing treat, and the delicious yogurt dip ensures that even little leprechauns will enjoy it.

Ingredients:
- 1 pineapple
- 1 bunch of green grapes
- 1-quart container of strawberries
- ½ cup plain Greek yogurt or dairy-free yogurt
- 1 tablespoon honey or (to taste) maple syrup
- ¼ teaspoon ground cinnamon
- ¼ teaspoon pure vanilla extract
Instructions:
Make the dip:
Spoon ½ cup of plain yogurt into a medium mixing bowl.
Measure and add the honey, cinnamon, and pure vanilla extract to the yogurt.
Using a large spoon or whisk, stir the ingredients together.
Taste the dip and adjust the sweetness with added honey or maple syrup as desired.
Transfer the dip to a suitable bowl for serving or store it in an airtight container in the fridge to chill until you're ready to use it.
Make the fruit rainbow:
Wash, rinse and pat dry all the fruit
Cut the fruit into bite-sized pieces
Place your dip bowl at the bottom of the board before you begin building your rainbow
Tip: A round board will make it easier to form an arched fruit rainbow. We used the line between the green and white marble on the Eclipse round marble cheese board to guide us.
Arrange one row for every fruit you are using
Once placed, cover the board and refrigerate until ready to serve

When serving, place spoons near the bowl for people to use and/or add toothpicks or cocktail picks for people to spear and dip their fruit.
Leftovers can be refrigerated for up to 3 days.
Variations: You can use any fruit that you might have on hand, like we did. But, to make your fruit arrangement more rainbow-like, you can use this combination, starting with the strawberries on the outside:
· Strawberries
· Mandarin oranges
· Fresh pineapple chunks
· Green kiwi
· Fresh blueberries
· Purple grapes
Feel free to use your favorite fruits or whatever you find in season. For the dip, you can substitute vanilla Greek yogurt or a favorite fruit dip of your choice.
We created this board for St. Patrick’s Day, but this rainbow fruit and dip appetizer would be delicious at a birthday party, summer cookout, or a weekend snack for your family. The leftovers are perfect for school lunches!
